Ingredients
- 3 cups certified gluten-free oats (old-fashioned style)
- 1 cup mixed nuts (almonds, walnuts, pecans)
- 0.5 cup pumpkin seeds
- 0.5 cup honey or maple syrup
- 0.25 cup coconut oil, melted
- 1 tsp pure vanilla extract
- 0.5 tsp ground cinnamon
- 0.5 tsp salt

Preheat oven to 325°F. Line a baking sheet with parchment.

Combine oats, nuts, and seeds in a large bowl.

Whisk honey, coconut oil, vanilla, cinnamon, and salt; pour over oat mixture and toss.

Spread on baking sheet in an even layer. Bake 20-25 minutes, stirring halfway, until golden.

Let cool completely without stirring for clumps to form. Store in airtight container up to 2 weeks.
