Ingredients

  • 4 certified gluten-free corn tortillas (6-inch)
  • 6 large eggs
  • 0.5 cup shredded cheddar cheese
  • 4 strips bacon or GF breakfast sausage, cooked
  • 0.25 cup diced onion
  • 0.25 cup diced bell pepper
  • 0.5 cup salsa
  • 1 tbsp butter

Instructions
