Gluten-Free Breakfast Burritos

Ingredients
- 4 certified gluten-free corn tortillas (6-inch)
- 6 large eggs
- 0.5 cup shredded cheddar cheese
- 4 strips bacon or GF breakfast sausage, cooked
- 0.25 cup diced onion
- 0.25 cup diced bell pepper
- 0.5 cup salsa
- 1 tbsp butter
Instructions

Scramble eggs in butter over medium heat until just set. Season with salt and pepper.

Sauté onion and pepper in a separate pan until soft.

Warm corn tortillas in a dry skillet or microwave 20 seconds.

Layer eggs, sautéed vegetables, crumbled bacon/sausage, and cheese on each tortilla.
